In a 5qt pot lightly oil and put at medium-high heat add chopped carrots, potatoes, onion, two tomatillos and one jalapeño sliced cooked until fragrant and colored. Add 6-7 cups of water and add 2-3 tablespoons of bouillon for flavoring. Pinch of cumin and msg for flavoring. Add cilantro and cover.

Once carrots and potatoes are somewhat soft add albondigas and chopped squash and stir and cover. Once albondigas are floating keep checking to make sure rice is soft in the meat. Make a side of Mexican rice and add to your soup pairs perfectly.

- 1/4 cup rice add more for preference.
