Lately, I’ve been on a mission to find super easy, healthy, and genuinely delicious meals that don't take forever to make after a long day. And guess what? This fish pasta with greens absolutely nailed it! Seriously, if you're looking for an effortless high-protein dinner that feels light yet satisfying, you’ve found it. I usually lean towards salmon because it’s so versatile and packed with those amazing omega-3s, but any firm white fish like cod or tilapia works beautifully here too. The beauty of this dish is how quickly it comes together, making it perfect for those busy weeknights when you still want something homemade and nutritious. Why I Love This Healthy Fish Pasta: First off, it’s a powerhouse of nutrition. You’ve got your lean protein from the fish, complex carbs from the pasta for sustained energy, and a generous dose of vitamins from the greens. It’s also incredibly adaptable – you can swap out ingredients based on what you have in your fridge or what’s in season. Plus, it’s super kid-friendly if you keep the seasonings mild! What You'll Need (My Go-To Version): Your Favorite Fish: About 6-8 oz per person. I often use salmon fillets, but shrimp or even canned tuna can work in a pinch for an ultra-fast version. Pasta: About 4 oz dry pasta per person. I love using linguine or whole wheat spaghetti for this, but penne or fusilli are great too. Sometimes I even find those fun green leaf pasta varieties, which add a nice visual touch and often a little extra veggie power! Fresh Greens: A big handful! Spinach, arugula, or baby kale are my top picks. They wilt down beautifully and add so much freshness. Aromatics: Garlic (minced, 2-3 cloves) and a small onion or shallot (finely chopped).
