Hey everyone! I just wanted to take a moment to say a huge thank you for helping me reach 10,000 followers! I’m beyond grateful for each and every one of you. • 3/4 cup flour
• 1 tsp baking powder
• 1/4 tsp salt
• 1/4 cup butter (room temperature)
• 1/2 cup sugar
• 1 egg
• 2 tbsp sour cream
• 1 tsp lemon juice
• 1/3 cup milk
• Lemon zest (to taste)
Instructions:
1. Preheat oven to 350°F (175°C). Grease two mini cake pans.
2. Mix sugar with lemon zest until fragrant. Beat in butter until creamy.
3. Add egg, then stir in sour cream and lemon juice.
4. Sift flour, baking powder, and salt directly into the bowl. Mix until just combined.
5. Pour in milk and fold gently.
6. Divide batter between pans. Bake for 23-26 minutes. Let cool.
Lemon Icing
Ingredients:
• 1/2 cup softened butter
• 1/2 tsp vanilla extract
• 4 cups powdered sugar
• 2 tbsp lemon juice
• 1 tbsp lemon zest
• 1/2 tbsp heavy cream
Instructions:
1. Beat butter and vanilla until creamy.
2. Gradually add powdered sugar, mixing until smooth.
3. Mix in lemon juice and zest.
4. Add heavy cream and beat until fluffy.
1. Once cakes are cool, spread lemon icing on top.
2. Serve and enjoy!
