Easy homemade chicken noodle soup 🍜
Back with #notyobigmommacookin this time it’s chicken noodle soup w/ a side of honey butter jiffy cornbread 😋. I love chicken noodle soup, it’s such a comfort meal on a cold day. &&W/ this emotional Texas weather I’d rather have soup everyday.
Here’s what you’ll need:
1. Rotisserie chicken (this is the easy version)
2. Egg noodles
3. Onion
3. Green onion
4. Celery
5. Carrots
6. Garlic
7. Chicken broth
Recipe
1. Start by deboning your chicken and set the bones aside. Add chicken broth to cover the bottom of the pot. Cut onion in half. Cut the ends off your celery and green onion. Chop the head off your carrots.
2. Add everything into your pot, INCLUDING YOUR CHICKEN BONES. Add plenty of water, season, and bring to a boil. Boil on medium heat for 1 hour. You will need season and add water throughout this process so be mindful when seasoning. (Mind you I said EASY not quick)
3. Add a little oil to a skillet and fry your chicken. (Make sure you season but not too heavily)
4. Strain your broth.
5. Add your chicken, chopped carrots, chopped celery, and egg noodles into your strained broth.
6. Cook on low heat until veggies and noodles are tender.
7. Serve and enjoy.
Chicken noodle soup is a classic comfort food that warms the soul, especially on chilly days. To elevate your soup, consider incorporating high-quality chicken broth, which can be made from scratch using leftover rotisserie chicken bones. Adding garlic and various herbs—such as thyme or parsley—can enhance the flavor profile. When selecting noodles, egg noodles are a popular choice due to their ability to absorb broth and add texture. For those looking to make their soup healthier, plenty of vegetables like carrots, celery, and onions provide not just nutritional value but also a burst of flavor. Consider adding some greens, such as spinach, for an added nutrient boost. In case of cold or flu season, enjoying a bowl of chicken noodle soup can serve as a traditional remedy, helping to soothe symptoms and provide hydration. Many variations exist, including gluten-free options using alternatives like quinoa or rice noodles. Explore your creativity and make this soup your own with different spices and additions!
