Hidden veggie pasta recipe🫑🧄🍅
This is one of my personal favorites!
It’s kid friendly and a great way to get veggies into the picky eaters in your life!
Roast your veggies at 400 for 20 minutes or so.
Blend them up, and BOOM!
One of the best pasta sauces you’ll ever try.
I forgot to take a picture of the sauce after it was blended lol. If it’s not creamy enough for your liking you can add a bit of heavy cream and or chicken stock!👌🏻

Hidden veggie pasta is a nutritious way to sneak vegetables into your meals without sacrificing flavor. To make the sauce, roast your chosen vegetables—like bell peppers, zucchini, and tomatoes—at 400°F for about 20 minutes until tender and slightly caramelized. This roasting process enhances their natural sweetness and makes them irresistible. Blend the roasted veggies until smooth; if you prefer a creamier texture, consider adding heavy cream or chicken stock for richness. This recipe is not only kid-friendly but also versatile. You can use different pasta shapes, mix in protein like grilled chicken or shrimp, or even pair it with a side salad for a well-rounded meal. Using herbs and spices such as basil, oregano, or crushed red pepper can elevate the flavor profile and cater it to your taste. Incorporating whole grain or legume-based pasta can also increase the nutritional value, making this meal a healthy choice for the whole family. Finally, this hidden veggie pasta can be made ahead of time, making it perfect for busy weeknights. Store leftovers in the refrigerator for up to three days or freeze portions for later use. With this delicious recipe, every bite can be a step towards healthier eating, proving that getting more vegetables into your diet doesn't have to be a chore.
