You have some spare veggies sitting in your fridge, they need to be used, but you don’t know what to make…
Make a garbage casserole!!
Personally I like to get creative in the kitchen, you’ll notice in about 75% of my recipes I don’t measure my ingredients. I go off vibes🤪
Knowing how to cook is more than just being able to read a recipe. It’s about knowing how to get your desired result, how to get the right consistency, and knowing what to add if it’s not quite there yet.
Your Garbage casserole can consist of more ingredients or a few less, it’s up to you and what you’ve got in your fridge!
This one was enough for 4 people.
(There’s two of us but we had leftovers)
My boyfriend gave me the idea to try turning this idea into a breakfast casserole, so stay tuned for that!
... Read moreOkay, so you've got those amazing fresh vegetables like zucchini, bell peppers, broccoli, carrots, onions, tomatoes, and potatoes just waiting to be turned into something delicious. My "garbage casserole" philosophy is all about embracing creativity and making the most of what you have! It's not just a recipe; it's a mindset for delicious, no-waste cooking.
When I'm whipping up this casserole, I often start by browning some ground beef – it’s a classic choice that adds so much flavor and substance. But honestly, this is where your fridge comes into play! If you have leftover cooked chicken, sausage, or even just want a vegetarian version, feel free to swap it out. Black beans or lentils can be fantastic plant-based protein options.
Now, for the veggies, almost anything goes! I love the combination of classic casserole staples like diced onions and bell peppers, but I’ve also thrown in mushrooms, spinach, corn, and even sweet potatoes when I had them. The key is to dice them roughly the same size so they cook evenly. Don't be shy with your seasonings either! Garlic Powder, Smoked Paprika, and Ground Cumin are my go-tos for adding a warm, savory depth. A good pinch of salt and pepper is non-negotiable for really bringing out those flavors.
One of my favorite additions that takes this casserole from good to amazing is the creamy element. A block of cream cheese and a few heaping spoonfuls of sour cream melt down beautifully, binding everything together and making it incredibly rich. If you're looking to lighten it up, you could use Greek yogurt instead of sour cream or a reduced-fat cream cheese, but sometimes you just need that comfort food indulgence! And let's not forget the shredded Mexican cheese – a generous layer on top creates that perfect golden, bubbly crust.
Beyond just tossing ingredients together, here are a few tips I've picked up to ensure your garbage casserole is always a hit:
Don't Overcook Your Veggies: Since they'll continue to cook in the oven, you want them slightly tender-crisp before baking. This prevents them from becoming mushy.
Layering for Success: While mixing everything is fine, sometimes I like to layer components – a base of meat and some veggies, then cream cheese cubes, then sour cream, then a final layer of cheese. It can help distribute everything nicely.
Taste and Adjust: Before baking, give your mixture a taste (if safe to do so, especially with raw meat). Does it need more salt? A little more spice? Adjusting before it goes into the oven makes a huge difference.
Browning the Top: For that irresistible golden crust, don't be afraid to crank up the heat to broil for the last few minutes, but watch it carefully so it doesn't burn!
This casserole is also a fantastic option for meal prep. I often make a big batch and portion it out for lunches during the week. It reheats beautifully in the microwave or oven. Sometimes, I'll even freeze individual portions for those really busy nights. Just thaw overnight in the fridge and reheat. A warm, hearty portion of this "garbage casserole" with a side salad or some crusty bread makes for a truly satisfying and easy dinner – proving that using up leftovers can be incredibly delicious!
Thank you for this!!! 🫶🏼
