No Meat Monday Under $10
All meals can be modified to fit your budget & family preference.

I pick these meals based around the seasonings I already have at home. Salt/Pepper/Garlic etc. And additional items at home such as milk, eggs, butter.
1. Bean & Cheese Burritos - Cook rice according to package. While that is cooking I spread my refried beans from the can onto to the flour tortillas, add the rice when cooking is completed, top with cheese and wrap tortillas into a burrito form. Heat a pan on medium heat and add in burrito and toast on sides. Serve with salsa.
2. Cheese Ravioli- Boil pasta as directed on package. Drain & add back to pot with pasta sauce. Heat until sauce is warmed. Serve with cheese sprinkled over & garlic bread.
3. Veggie Nachos- On greased baking dish spread chips in an even layer. Too chips with drained corn & drained beans. Top with half of cheese. Bake in over at 350 for 8-10 minutes until cheese is melted and corn/beans are heated through. Remove from oven and add remaining toppings - chopped tomatoes, diced jalapeños , diced onions. Spread rest of cheese evenly and serve with sour cream.
4. Lentil Vegetable Soup- Heat a few tablespoons of olive oil in a large pot over medium-high heat. Add the mirepoix mix and sauté until softened, about 5 minutes. Add garlic, 1 tablespoon curry powder, 1 teaspoon ground cumin, 1 teaspoon dried thyme, and 1/2 teaspoon kosher salt. Cook about 1 minute. Add 2 cups of lentils, 1 can of diced tomato, diced potato and 6 cups broth/water, stir to combine, and bring to a simmer. Cover and reduce the heat to maintain a gentle simmer. Cook, stirring occasionally until the lentils are tender, 18 to 22 minutes. Remove from heat and stir in 4-5 cups of spinach.
