🍔 Smash Burger at Home with Chorizo Cheese
Juicy smash burgers topped with jalapeño chorizo cheese, crispy fries, and spicy sriracha aioli.

Spicy Sriracha Aioli
• 1 cup mayonnaise
• 4–6 Tbsp sriracha
• Juice of ½ lime
• 4 garlic cloves, minced
• 2 tsp cayenne pepper
• 1 tsp salt
• 1 tsp black pepper
• Dash smoked paprika

Jalapeño Monterey Jack Chorizo Queso
• 1 whole jalapeño, diced
• ½ lb chorizo
• 10 oz white American cheese, grated
• 6 oz Monterey Jack cheese, grated
• ½–¾ cup whole milk
• 1–2 tsp salt
• 2 tsp black pepper
• 1–2 tsp smoked paprika
• 2 tsp cayenne powder
• 3 Tbsp butter
• 3 Tbsp flour

• 2–4 russet potatoes
• 1 Tbsp seasoned salt
• Neutral frying oil
• Ice bath (water + ice)
• 2 tsp vinegar

• 1 lb 80/20 ground beef
• 1 tsp garlic powder
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp onion powder
• Pinch smoked paprika
• American cheese slices
• Pickle chips
• Tomato slices
• Onion slices
• Lettuce
• Burger buns
• Wooden skewer or long toothpick
Recipe:
🔥 Spicy Sriracha Aioli
1️⃣ In a mixing bowl combine:
• 1 cup mayo
• 4–6 Tbsp sriracha
• Juice of ½ lime
• 4 garlic cloves, minced
• 2 tsp cayenne pepper
• 1 tsp salt
• 1 tsp black pepper
• Dash smoked paprika
2️⃣ Mix well and refrigerate until ready to use.

🧀 Jalapeño Chorizo Queso
1️⃣ In a skillet over medium heat, cook:
• ½ lb chorizo
While cooking, dice 1 jalapeño and add it to the skillet.
2️⃣ Cook until the chorizo is browned and lightly crispy.
Remove from pan and set on paper towels to drain grease.
3️⃣ In the same skillet make a roux:
• 3 Tbsp butter
• 3 Tbsp flour
Cook for 1 minute.
4️⃣ Slowly whisk in:
• ½–¾ cup whole milk
Reduce heat to low.
5️⃣ Season with:
• salt
• black pepper
• smoked paprika
• cayenne
6️⃣ Add and melt:
• 10 oz grated white American cheese
• 6 oz grated Monterey Jack
7️⃣ Stir the jalapeño chorizo back into the cheese sauce and keep warm.

🍟 Crispy French Fries
1️⃣ Cut 2–4 russet potatoes into fries.
2️⃣ Soak in ice water + 2 tsp vinegar for 30–60 minutes
(this makes them extra crispy).
3️⃣ Pat fries completely dry.
4️⃣ Fry in oil at 325–370°F for 10–15 minutes until golden.
5️⃣ Remove to a rack and season immediately with seasoned salt.

2️⃣ Roll 1 lb 80/20 ground beef into loose balls.
3️⃣ Place onto skillet and smash thin using a burger press or heavy spatula.
Season with:

4️⃣ Cook 2–3 minutes until the edges crisp.
