Under 30 Minutes Prep Time But Full For Hours ⏳

I recently went to Aldi and did some shopping but my main goal was to purchase some items to make this bowl I saw on Tik Tok.

I think it turned out great and it barely took any time to make.

Heres what you need:

Potatoes

Ground Meat (I had ground turkey)

Avocado

Tomato paste

Taco seasoning

Optional: pico/salsa/sour cream

I diced up my potatoes and seasoned them with everything season salt and Italian seasoning. Then put them in the air fryer to roast for 15 minutes.

Then while that’s going on I went ahead and cooked the ground turkey on the stove. Once the meat was brown I threw in the tomato paste, a bit of water, & the taco seasoning. Added a little bit of Italian seasoning too.

Once the potatoes were done I put them in my containers with the meat on top. The avocado I cut up at work so it didn’t turn brown.

And I was amazed it turned out so good. Maybe I’ll add corn & pico in the future.

I often prepare a similar bowl meal prep for my workweek lunches because it strikes the perfect balance between nutrition and convenience. Using an air fryer to roast diced potatoes is a smart shortcut—it delivers crispy, golden potatoes without needing too much oil or constant attention, saving time and making cleanup easier. The combination of everything seasoning salt and Italian seasoning gives the potatoes a flavorful twist I hadn’t expected but really enjoyed. For the protein, ground turkey is a great lean meat option that cooks quickly on the stove. Mixing in tomato paste and taco seasoning creates a savory base that complements the potatoes beautifully. Adding a touch of Italian seasoning adds a hint of herbal complexity, enhancing the overall taste. One trick I learned is to cut up avocado fresh at work or right before eating; this prevents browning and keeps the bowl visually appealing and fresh. If you want to add more texture and flavor, corn, pico de gallo, or a spoonful of salsa or sour cream are excellent optional additions. This bowl not only takes less than 30 minutes to prep but also keeps hunger at bay for long hours, making it ideal for office meals or busy days. Plus, shopping at stores like Aldi can help you keep your grocery bills affordable while still getting quality ingredients. Incorporating such recipes into your meal rotation can help reduce reliance on fast food or snacks that leave you hungry soon after eating. Plus, it supports a balanced diet that’s rich in protein, healthy fats, and complex carbs—all essential for sustained energy throughout your work shift or day-to-day activities.
