Hot Honey Chicken & Tinis Mac n Cheese
Hot Honey Chicken bites
- [x] Chicken tenders, cut into bite size
- [x] 1/2 cup buttermilk
- [x] 1/4 cup hot sauce ( Dave’s hot sauce )
- [x] Season with salt, black pepper, garlic powder, onion powder, paprika, cayenne (optional)
^Wet batter
- [x] 1 cup flour
- [x] 1 tbsp cornstarch
- [x] Season with salt, black pepper, garlic powder, onion powder, paprıka, cayenne (optional)
- ^Dry coating ^
Honey Sauce
- [x] 1/4 melted butter
- [x] 1tbsp Hot sauce
- [x] 1Tbsp Honey
Simmer on stove for 10 mins
Tinis Mac n cheese
- [x] 1 Ib pasta (cavatappi)
- [x] 1 lb mozzarella
- [x] 1lb colby jack
- [x] ½Ib sharp cheddar
- [x] 1 tsp garlic powder
- [x] 1 tsp onion powder
- [x] 1 tsp smoked paprika
- [x] 1 tsp chicken bouillon powder
- [x] 3 tbsp unsalted butter
- [x] 3 tbsp flour
- [x] 12 oz evaporated milk
- [x] 2 cups heavy cream
- [x] 1/2 tbsp Dijon mustard
Grate the cheese, mix it, and divide it between two bowls.
Cook the pasta in a large pot of boiling salted water according to directions for al dente. Timing varies depending on the brand of pasta.
While the pasta cooks, prepare the roux for the cheese sauce by melting the butter with half of the seasonings. Then add the flour and cook until bubbly.
( till flour taste is gone )
Pour in the evaporated milk, heavy cream, and mustard, whisking frequently until it thickens.
Add the cheese a handful at a time, melting each batch before adding the next.
Toss in the pasta until fully coated.
Layer the pasta with the remaining shredded cheese in a baking pan and bake.
Broil for a couple of minutes before removing from the oven and digging in!
