On Day 2 of creating your sourdough starter, you should notice some bubbles forming. This indicates that fermentation is underway! It’s crucial to feed your starter to strengthen the yeast and bacteria that are developing. Use equal weights of flour and water, ideally filtered or bottled to avoid chlorine. Some users prefer a mixture of all-purpose and whole wheat flour, which can add to the flavor and help stimulate fermentation due to the nutrients in whole wheat. Remember to stir the mixture well to incorporate air and check for its consistency; a thick batter-like texture is best. Sourdough starters rely on wild yeast present in the atmosphere, so keep your starter in a warm place, ideally around 75-80°F (24-27°C). Experiment with different water types and flour combinations to find your perfect match! If you're looking to ferment quicker, you can slightly increase the feeding frequency, though monitoring bubbles will let you know if the starter is ready.
