Strawberry Milk Pudding

Pudding

- 450g milk

- 250g light cream (or half-and-half for similar richness)

- 40g sugar

- 15g gelatin sheets (soaked in cold water until soft)

*Note: If using powdered gelatin instead, substitute with about 1.5 tablespoons (or 1.5 packets), bloomed in 1/4 cup cold water.

Strawberry Jam

- 350g fresh strawberries

- 60g sugar

- A little lemon juice to taste

Steps:

1. Make the Jam

- Mash strawberries, sugar, and lemon juice in a saucepan.

- Cook over medium-low heat until thick.

- Chill in the fridge.

2. Make the Pudding

- In the same pot, add milk, cream, and sugar.

- Heat until it just starts to boil.

- Turn off the heat and stir in softened gelatin until melted.

- Strain the mixture and pour into cups.

- Chill in the fridge for at least 6 hours.

3. Finish and Serve

- Spread strawberry jam on top.

- Add fresh strawberries and mint if you like.
