Sourdough Matcha Sesame Brioche Roll

I really wanted to make something for christmas so I decided to experiment and make something new!

This recipe was adapted from Farmhouse on Boone’s recipe of a Sourdough Cinnamon Roll Brioche. I made some changes by adding matcha, sesame paste, and making a coconut cream icing. I also halved the recipe because I was unsure if I would like it 😅

*i think there are areas where this recipe can be better but here is the recipe i used :)

113g starter

210g bread flour

35g AP flour

2 eggs

4g salt

56g milk

2 sticks of room temp butter

6g matcha

___

Sesame Filling

57g soften butter

100g sesame paste

___

Coconut Cream Icing

Can of Coconut Cream

Powdered Sugar

Vanilla Bean Paste

1. Add your active sourdough starter, bread flour, all-purpose flour, sugar, eggs, salt, milk, and butter to the bowl of a stand mixer with a dough hook attachment. Knead until smooth and glossy. It's a very wet dough and may take 10-15 minutes or longer to come together in the stand mixer. Don't add more flour.

2. Cover the dough with plastic wrap, a damp towel, or a tight-fitting lid and place in a warm place for 6 to 8 hours or until doubled.

3. In a separate bowl, combine softened butter and sesame paste. Stir until smooth.

4. Lightly dust a work surface with flour, then roll out the dough into a large rectangle that is roughly 1/4 inch thick. Spread the filling evenly over the top of the dough.

5. Cut your roll into 1 inch strips and then roll each strip to form rolls.

6. Cover and allow to rise until doubled, around 2-6 hours or overnight in the fridge.

7. Optional - place can of coconut cream in fridge overnight

8. Preheat oven to 375F. Bake for 30 mins.

9. Make coconut cream icing. Open the can of coconut cream and carefully scoop the hardened cream into a bowl. Add at least 1/2 cup powdered sugar and 1 teaspoon of vanilla bean paste. I gradually added more powdered sugar and vanilla bean paste until I created my desired consistency.

10. Let the rolls cool 15 mins and then brush the icing on top
