The pork is incredibly tender and flavorful, often slow-cooked for hours until it's falling apart, then sometimes crisped up beautifully right before serving. Pairing it with the sweet, caramelized plantains and crunchy roasted peanuts creates a symphony of textures and tastes that is simply irresistible. Finding these local gems in a vibrant local lunch spot felt like a true cultural immersion, a place where everyday life unfolds amidst delicious aromas. And speaking of local specialties, the cevichechochos we sampled was a vegetarian revelation! Made with tender beans, giant corn (chochos), fresh onions, and a zesty lime juice, it’s a refreshing and tangy dish that proved there's so much more to Ecuadorian cuisine than just seafood. Of course, Ecuador is famous for its stunning coastline, so our tour wouldn't have been complete without indulging in the incredible fresh fish and shellfish. The seafood stew we enjoyed was overflowing with various treasures from the ocean, perfectly seasoned with herbs and spices, and incredibly comforting. It was a testament to the pristine, fresh ingredients available daily. Another unforgettable treat was the beef-filled plantain empanada. These savory pockets of deliciousness, combining the natural sweetness of ripe plantain with a rich, seasoned ground beef filling, are simply irresistible. They make for the perfect snack or a light, satisfying meal while you're wandering through the bustling markets or exploring the city streets. While our tour led us to these fantastic dishes, if you’re looking to explore even more 'ecuadorian typical food,' keep an eye out for *Locro de Papa*. This hearty potato and cheese soup, often served with slices of creamy avocado and a hard-boiled egg, is another beloved comfort food. It’s a thick, creamy stew that warms you from the inside out, especially perfect for cooler days in the Andean regions. Though we didn't have it on this particular tour, I've heard amazing things and it's definitely on my list for next time, showcasing the diverse regional flavors of Ecuador. Beyond the main courses, don't miss the fresh juices – we tried amazing blends from sugarcane and coconut, and many other unique tropical fruits I'd never seen before! – and the delightful desserts like mango custard. The sheer variety of fruits and creative ways they are incorporated into drinks and sweets is truly wonderful. To really experience the heart of Ecuadorian food, seek out the bustling outdoor market and tiny hole in the wall juice shop where you'll find authentic flavors and meet amazing local vendors. It's truly the best way to get a real taste of the culture and its incredible hospitality!
