ถ้าเพิ่งเริ่มสนใจกาแฟเกอิชา (Gesha/เกชา) แล้วสงสัยว่า “กาแฟเกอิชา คืออะไร” และทำไมราคาแรงกว่ากาแฟทั่วไป อันนี้คือมุมที่เราใช้เป็นเช็กลิสต์ตอนเลือกสั่งในร้านค่ะ (ช่วยให้เข้าใจว่าจ่ายแพงเพื่ออะไร) 1) เกอิชาเป็น “สายพันธุ์” ไม่ใช่วิธีคั่วหรือเมนู หลายคนเห็นคำว่าเกอิชาแล้วนึกว่าเป็นสูตรเฉพาะ แต่จริงๆ คือสายพันธุ์กาแฟอาราบิก้า พอเป็นสายพันธุ์นี้ กลิ่นรสมักจะเด่นไปทางดอกไม้ ผลไม้ และโทนคล้ายชา (tea-like) มากกว่าความเข้มขมแบบช็อกโกแลตถั่วที่เราคุ้นเคย 2) ทำไมกาแฟเกอิชาถึงแพง: แพงตั้งแต่ “ต้นทาง” จากที่คุยกับบาริสต้าและอ่านโปรไฟล์เมล็ด หลักๆ มาจากปลูกยาก+ผลผลิตไม่สูง ทำให้ต้นทุนต่อกิโลสูงกว่าสายพันธุ์ยอดนิยมอื่นๆ อีกทั้งล็อตที่คะแนนคัปปิ้งสูงมักเข้าสู่ระบบประกวด/ประมูล ราคาก็ยิ่งพุ่ง และสุดท้ายพอมาถึงปลายทาง ค่าแปรรูป ค่าคั่ว ค่าขนส่ง และความเสี่ยงเรื่องคุณภาพระหว่างทาง ก็ถูกรวมอยู่ในราคาแก้วด้วย 3) กลิ่นรสที่ควร “คาดหวัง” เวลาเจอเมนูเกอิชา ถ้าร้านทำโปรไฟล์ชัดๆ เรามักจะเจอโทนประมาณ ดอกไม้ขาว มะกรูด/ซิตรัส พีช เบอร์รี่ น้ำผึ้ง หรือกลิ่นหอมแบบชาอู่หลง บอดี้จะไม่หนามาก แต่ความหอมยาวและความหวานหลังกลืนจะเด่น จุดนี้แหละที่ทำให้หลายคนติดใจ 4) จะสั่งยังไงให้คุ้ม ถ้าอยากลองครั้งแรก - เริ่มจาก “ดริป/ฟิลเตอร์” ก่อน: เรารู้สึกว่ากลิ่นดอกไม้-ผลไม้ขึ้นชัดกว่าเมนูนม - ถ้าชอบเย็น ลอง “กาแฟดำเย็น”: จะได้ความหอมชัดและดื่มง่าย (บางร้านทำเป็นใส่น้ำแข็งก้อนใหญ่ กลิ่นจะอยู่ได้นาน) - ขอให้ร้านแนะนำระดับคั่ว: เกอิชามักเหมาะกับคั่วอ่อน-กลางอ่อน ถ้าคั่วเข้มมากๆ กลิ่นเอกลักษณ์อาจหาย 5) อ่านการ์ดเมล็ด (coffee card) แบบเร็วๆ ก่อนตัดสินใจจ่าย เวลาจะสั่งแก้วแพงๆ เราจะดู 4 อย่างนี้: แหล่งปลูก/ประเทศ, วิธีโปรเซส (Washed/Natural/Anaerobic ฯลฯ), โน้ตรส, และราคาเมล็ดต่อแก้ว/ต่อดริป บางล็อตโปรเซสแบบ Anaerobic จะหอมฟุ้งมากแต่ก็เสี่ยง “กลิ่นหมัก” ถ้าไม่ชอบสายหมักให้เลือก Washed จะปลอดภัยกว่า 6) เกอิชาในไทยต่างจากต่างประเทศไหม ถ้าเจอเกอิชาปลูกไทย ข้อดีคือสดใหม่และมีคาแรกเตอร์เฉพาะพื้นที่ บางล็อตจะออกผลไม้เมืองร้อนชัด ดื่มแล้วสนุกไม่แพ้กัน แต่ราคา/ความหายากก็ยังสูงตามต้นทุนและผลผลิตเหมือนกันค่ะ สรุปสั้นๆ ในมุมคนดื่ม: กาแฟเกอิชาแพงเพราะหายาก ปลูกยาก ล็อตคุณภาพสูงถูกแย่งซื้อ และรสชาติ “หอมซับซ้อนแบบดอกไม้ผลไม้” ที่หาได้ไม่ง่ายในสายพันธุ์อื่น ถ้าอยากลองให้เริ่มจากดริปหรือกาแฟดำเย็น แล้วค่อยไล่โปรไฟล์ที่ชอบไปเรื่อยๆ จะคุ้มและเข้าใจคำว่า Gesha มากขึ้นจริงๆ
