INGREDIENTS
Ā· 1 package Silken Tofu
Ā· 400 g potatoes sliced
Ā· 2 tbs extra virgin olive oil
Ā· 1 small onion diced
· ½ tsp salt
· ½ pepper
· ¼ cup almond milk
Ā· 1 tbs Dijon mustard
Ā· ā cup gram flour
Ā· 2 tbs nutritional yeast flakes
Ā· 2 tbs cornstarch
Ā· 1 tsp ground turmeric
INSTRUCTIONS
1. Cut potatoes into thin slices about ¼ inch each.
2. Heat 1 tbs extra virgin olive oil in a large non-stick frying pan on medium-low heat and fry potatoes on each side until golden brown.
3. Once potatoes are fried, use the same pan, and sautƩ the onions.
4. Prepare the tofu batter: place the almond milk, silken tofu, mustard, flour, nutritional yeast, flour, cornstarch, salt, pepper and turmeric in a blender and blend until smooth.
5. Place a layer of potatoes and onion (about 1/3 of the potatoes) in an 8-inch cast iron pan and pour a small amount of batter on top. Repeat the process until you are out of potatoes and tofu batter.
To Oven-Bake the Omelette:
Pre-heat the oven to 350F and place your omelette pan covered with tin foil for about 20 min in the oven. After that time or until the omelette is firm to the touch, take off the tin foil and bake for another 10 min until golden brown. Take it out of the oven and let it rest for at least an hour, best overnight in the fridge, before cutting.
