Hulk Muffins (Spinach & Banana)
Hidden Veggie Muffins for Toddlers! These spinach and banana muffins aka HULK muffins (for those boy moms)
Ingredients:
6 oz. fresh baby spinach
4 tablespoons butter melted
¾ cup milk
â…“ cup maple syrup
2 small ripe bananas
1 large egg
1 teaspoon vanilla extract
2 cups flour
2 teaspoons ground cinnamon (optional)
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chocolate chips (optional)
Directions:
1. Preheat oven to 350°F.
2. Line muffin pans with paper liners; set aside.
3. In blender, puree the spinach, melted butter, milk, maple syrup, bananas, egg, and vanilla.
4. In a separate bowl, whisk the flour, cinnamon (optional), baking powder, baking soda and salt, (and chocolate chips is using them)
5. Add to the wet ingredients in the blender and pulse.
6. Pour wet into dry ingredients. Do NOT overmix.
7. Evenly divide batter into pans, filling 18 muffin cups.
8. Bake 18 to 20 minutes, or until muffins are firm on top. Watch closely and remove from oven before they start to brown!
9. Remove muffins immediately from pan to wire rack to cool completely before eating
