Homemade Fried Chicken Nuggets Recipe
I hate deep frying…which is why these are shallow fried 😉 I used a cast iron, but any deep pan will work!
Ingredients:
• Chicken breast
• Buttermilk
• Egg
• Hot sauce (I used Frank’s red hot)
• Flour
• Corn starch
• Baking soda
• Seasonings (paprika, garlic powder, salt, pepper, Ms Dash seasoning blend, cayenne)
• Oil
Directions:
1. In a container with a lid, mix 1 egg, 1 cup buttermilk, salt, pepper, and a generous amount of hot sauce of your choice. Mix well.
2. Cut chicken breast into small cubes. I used about 2 large chicken breasts. Add to the mixture and mix well. Cover with lid and let marinate overnight.
3. Make a flour mixture in a large bowl. Use about 1 cup flour, 1/4 cup corn starch,1 tsp baking soda, and a GENEROUS amount of seasonings.
4. Roll chicken in flour mixture. Cover chicken completely.
5. In a shallow pan, fill oil halfway. Heat on medium-high. Be patient and let these warm completely before cooking! Although hot, the oil should not be popping or boiling. Test the oil with a small piece of chicken - the oil should start bubbling once chicken is in the pan.
6. When the oil is hot enough, add chicken. Cook on each side for about a minute, then flip. The chicken should look golden and crispy. Remove from the oil and let cool on an elevated surface (like a rack) to let the oil drip off.
7. Let cool and then serve with your favorite dipping sauce. Enjoy!

Making homemade chicken nuggets is such a rewarding experience, especially when you can achieve that irresistible crispy exterior and tender, juicy interior without the hassle of a deep fryer. I’ve learned a few tricks over time that really elevate these pan-fried beauties, making them taste even better than store-bought! Mastering the Shallow Fry for Ultimate Crispiness While many recipes call for deep frying, I find shallow frying in a cast iron pan gives you all the glorious crispiness with much less oil and cleanup. The key is to get your oil to the right temperature – not so hot it smokes, but hot enough to create that beautiful 'bubbling' effect when the chicken hits the pan. I usually test it with a tiny piece of coated chicken. If it sizzles gently and starts to turn golden, you're good to go! Don't overcrowd your pan; working in batches ensures the oil temperature stays consistent, leading to evenly golden-brown, crispy nuggets. And trust me, a splatter screen is your best friend here. It saves so much scrubbing later! The Secret to that Perfect Seasoned Coating My seasoned flour mixture is where a lot of the magic happens. Beyond the basics like paprika and garlic powder, I sometimes add a pinch of smoked paprika for a deeper flavor, or a tiny bit of cayenne for a subtle kick. For an extra crispy crust, I swear by a double-dredging technique. After the first flour coating, dip the chicken back into the buttermilk mixture briefly (just a quick dunk!) and then back into the flour. This creates more surface area for that incredible crunch. Make sure to really press the coating onto the chicken pieces, ensuring every inch is covered. And remember, letting the cooked nuggets cool on a metal rack allows air to circulate, preventing them from getting soggy and ensuring maximum crispiness. Ensuring a Tender, Juicy Interior Every Time Nobody wants dry chicken nuggets! The overnight buttermilk marinade is crucial for achieving that tender, cooked white meat interior. Buttermilk works wonders to tenderize the chicken while infusing it with flavor. Don't skimp on the marinating time; it truly makes a difference in the final texture. When cooking, keep a close eye on them. Pan-fried nuggets cook relatively quickly, usually a minute or two per side until they're golden and cooked through. Cutting into one of the larger pieces can help you check for doneness. Trust me, with these steps, you’ll achieve that perfect texture every single time. Elevate Your Nuggets with Flavor Boosters & Dipping Sauces Want to switch things up? Experiment with your seasoning blend! A dash of onion powder, a tiny bit of dried thyme, or even a pinch of brown sugar can add intriguing layers of flavor to your seasoned flour mixture. And what are nuggets without dipping sauces? While ketchup is a classic, I love exploring other options. Homemade spicy mayo (mayo, sriracha, lime juice), a tangy honey mustard, or a smoky BBQ sauce can really transform the experience. Sometimes, I even whip up a simple garlic aioli. Don't be afraid to get creative and find your favorite combinations!
