Homemade Fried Chicken Nuggets Recipe

I hate deep frying…which is why these are shallow fried 😉 I used a cast iron, but any deep pan will work!

Ingredients:

• Chicken breast

• Buttermilk

• Egg

• Hot sauce (I used Frank’s red hot)

• Flour

• Corn starch

• Baking soda

• Seasonings (paprika, garlic powder, salt, pepper, Ms Dash seasoning blend, cayenne)

• Oil

Directions:

1. In a container with a lid, mix 1 egg, 1 cup buttermilk, salt, pepper, and a generous amount of hot sauce of your choice. Mix well.

2. Cut chicken breast into small cubes. I used about 2 large chicken breasts. Add to the mixture and mix well. Cover with lid and let marinate overnight.

3. Make a flour mixture in a large bowl. Use about 1 cup flour, 1/4 cup corn starch,1 tsp baking soda, and a GENEROUS amount of seasonings.

4. Roll chicken in flour mixture. Cover chicken completely.

5. In a shallow pan, fill oil halfway. Heat on medium-high. Be patient and let these warm completely before cooking! Although hot, the oil should not be popping or boiling. Test the oil with a small piece of chicken - the oil should start bubbling once chicken is in the pan.

6. When the oil is hot enough, add chicken. Cook on each side for about a minute, then flip. The chicken should look golden and crispy. Remove from the oil and let cool on an elevated surface (like a rack) to let the oil drip off.

7. Let cool and then serve with your favorite dipping sauce. Enjoy!
