Egg-Free Baked Tuna Croquettes (with Vegan Mayo)
Ingredients
• 2 cans tuna, drained
• 1–1¼ cups bread crumbs
• 2–3 tbsp vegan mayo
• 1 tbsp mustard (optional)
• 1–2 cloves garlic (or ½ tsp garlic powder)
• ¼ cup chopped onion (optional)
• 1–2 tbsp parsley (optional)
• Salt & pepper
• Olive oil for drizzling
• Extra bread crumbs for coating
Instructions
1. Preheat oven to 400°F (200°C).
2. Mix tuna, 1 cup bread crumbs, vegan mayo, mustard, garlic, onion, parsley, salt, and pepper.
3. Adjust texture:
• Too dry → add a little more vegan mayo.
• Too wet → add more bread crumbs.
4. Shape into patties or oval croquettes.
5. Roll each in extra bread crumbs.
6. Place on a lined or lightly oiled baking sheet.
7. Drizzle or spray lightly with olive oil.
8. Bake 33/44 minutes, flipping halfway, until golden and crisp.
Extra Binding Tip:
Add 1 extra tbsp vegan mayo OR a tiny flour-and-water paste if mixture seems crumbly.
