First off, ditching the meat doesn't mean sacrificing flavor or variety. In fact, it opens up a whole new world of delicious possibilities. My philosophy is all about abundance and balance. Here’s how I build a stunning, meat-free spread that’s both gorgeous and incredibly tasty.

Carbs for Scooping & Spreading: You need vehicles for all those wonderful cheeses and dips! A variety of crackers – plain, seeded, water crackers – is a must. Sliced baguette or artisanal bread works wonderfully too. For a gluten-free option, rice crackers or veggie sticks are great.
Nuts & Olives for Savory Bites: These add wonderful texture and savory notes. Roasted almonds, cashews, walnuts, and pecans are excellent. And for olives, I usually go for a mix of Kalamata and green olives. Pickled items like gherkins or marinated artichoke hearts also add a lovely tang.
Sweet Touches & Spreads: A drizzle of honey, a dollop of fig jam, or a small bowl of fruit preserves can elevate your board immensely. And for a little extra indulgence, a few squares of dark chocolate or some small vegan cookies are always appreciated.
Presentation is Everything (Even Without a Board!): Don't have a fancy charcuterie board? No problem! I've used large serving platters, slate tiles, cutting boards, or even just a clean, flat wooden surface (like a large pastry board or tray) covered with parchment paper. The trick is to arrange items closely, creating little clusters of food. Start with your larger items like cheeses and bowls of dips, then fill in the gaps with fruits, veggies, crackers, and nuts. Garnishing with fresh herbs like rosemary or basil can make it look incredibly professional.
