I tried the viral flaxseed muffin and I’m a FAN. So easy and delicious!! Recipe is from @Brittany Carpenter | MS, RD/LD
EASY Recipe:
-1 egg, scrambled eggs
-3Tbsp ground flax
-1/2 tsp baking powder
Mix it all together and microwave for 1 minute.
I recently tried making the viral flaxseed muffin myself, and I have to say, it’s a fantastic way to get more fiber into your diet without spending much time in the kitchen. Flaxseed is a powerhouse ingredient loaded with omega-3 fatty acids, lignans, and both soluble and insoluble fiber, which can help improve digestion and support heart health. What I love about this recipe is how simple it is—just an egg, ground flaxseed, and baking powder mixed together and microwaved for a minute. It’s perfect when you’re craving a quick snack or need a filling breakfast on the go. Plus, it’s very customizable; I sometimes add a dash of cinnamon or a few blueberries to give it some extra flavor. One tip I found useful: using freshly ground flaxseed can enhance the taste and nutritional benefits, but pre-ground flaxseed works great too. Also, make sure not to overcook the muffin in the microwave to keep it moist. This muffin fits well into a fibermaxxing diet plan, which emphasizes increasing fiber intake for better digestion and satiety. If you’re looking to boost your fiber intake and enjoy a quick, delicious treat, I highly recommend giving this recipe a try. It’s a tasty way to eat healthy and feel satisfied!
