Zucchini Fritters
Zucchini fritters remind me so much of my childhood and they are so easy and delicious to make! I picked up these zucchini from the farmers market and knew exactly what I was going to make with them. I definitely recommend using a cheese grater to grate your zucchini. What’s your favorite zucchini recipe?
Recipe:
2 medium zucchini
1 large egg
1/4 cup of parmesan
1/4 cup of breadcrumbs(I recommend italian breadcrumbs)
Season to taste!
One of the key steps I always follow when making zucchini fritters is to effectively remove the excess moisture from the shredded zucchini. After grating the zucchini using a cheese grater, I place the shredded zucchini in a bowl lined with a paper towel and sprinkle some salt over it. The salt helps to draw out additional water. Then, I wrap it up in the towel and squeeze firmly to get rid of as much liquid as possible. This step is crucial because it ensures the fritters hold together well and become crispy instead of soggy. For seasoning, I like to keep it simple but flavorful. Salt and pepper are essentials, but I often add a pinch of garlic powder and some crushed red pepper flakes to give the fritters a subtle kick. Using freshly grated parmesan cheese not only adds a nice savory depth but also helps with texture. When mixing the ingredients — shredded zucchini, egg, parmesan, and Italian breadcrumbs — it’s important not to overmix to maintain a light texture. For cooking, I prefer frying them in a pan with a little oil over medium heat. Cooking them slowly allows the fritters to get golden and crisp on the outside while staying tender inside. Alternatively, you can bake or broil them for a lighter version. As a personal tip, serving zucchini fritters with a dollop of sour cream or a drizzle of lemon juice brightens up the flavors beautifully. These fritters are a fantastic way to enjoy fresh zucchini from the farmers market and make for a quick snack or delicious side dish. What’s your favorite twist on zucchini fritters? Feel free to experiment with adding herbs like dill or basil, or even toss in some chopped green onions for an extra fresh touch.
