Using what we have to make a one-pan gnocchi meal

This was one of those “what can I throw together with what’s already in the fridge” dinners and it actually turned out so good!!

I’ve been trying to rely less on extra grocery runs and just use what we already have on hand, especially on busy days. Gnocchi is one of those easy staples that makes it feel like a real meal without much effort.

Everything goes into one pan, minimal cleanup, and it’s flexible enough to work with whatever you have, like broccoli from last nights take out or those mushrooms that need to be used up.

Not the most planned meal, but honestly those are usually the ones that end up in the rotation.

This is your sign to check your fridge before ordering takeout.

I often find myself staring at random veggies in the fridge and wondering how to bring them together into something comforting and quick. Mushrooms, onions, and leftover broccoli are some of my go-to ingredients that turn this meal into a nutrient-packed dish with minimal effort. What I love about using gnocchi is that it cooks quickly and soaks up whatever flavors you add—whether it’s a simple garlic butter sauce, some herbs, or a splash of cream. In my experience, adding in whatever greens I have, like spinach or kale, really brightens the dish and adds freshness. When I don’t have fresh greens, broccoli leftovers, like in this case, work beautifully and add a nice crunch. For added flavor without complicating things, I sometimes toss in sautéed onions or garlic and finish the meal with a sprinkle of grated cheese or a squeeze of lemon juice. This not only boosts the taste but also makes the dish feel a bit more special. Plus, by using one pan, cleanup is a breeze — a real lifesaver on busy weeknights. If you’re worried about picky eaters, I’ve found that hiding veggies in gnocchi dishes works better than trying to serve them plain. The texture and familiar taste of gnocchi make it accessible, while the veggies add nutrition without overwhelming the palate. This easy, flexible approach means you can avoid last-minute takeout trips, eat a wholesome home-cooked meal, and reduce food waste all at once. So next time you’re staring at your fridge wondering what to make, give a one-pan gnocchi meal a try — it might just become a regular in your dinner rotation!
