Weekly Meal Plan
This week’s menu is a little different than usual because what we thought was going to be a quick paint job has turned into a full project. Once Gareth started, he realized the wall and ceiling needed way more work than expected, so now we’re in the middle of repairing everything before we can even think about painting.
Between a chaotic work week, preschool pickup, and trying to tackle this project in the evenings, I knew I needed dinners to be as simple and filling as possible. Nothing that requires a ton of effort or brain power at the end of the day.
So this week is a mix of dump-and-bake, slow cooker, and one pan meals. The kind of meals where you can just throw everything together, clean up quickly, and move on to the next thing on the never-ending to-do list.
This is exactly why I love meal planning. Weeks like this would feel so much more chaotic without it. At least dinner is one thing I don’t have to think about while we’re trying to fix the house and (hopefully soon) actually get to the painting part.
If you’re in a busy or chaotic season too, highly recommend leaning into easy meals for a bit. It doesn’t have to be fancy to work.
