Chicken Kebab Tortilla Skewers with Tzatziki

Easy healthy weeknight dinner

Ingredients

Kebab Rolls

500 g chicken mince

3 large flour tortillas

1 cup mozzarella cheese

2 tbsp olive oil

Spices

1 tsp paprika

1 tsp cumin

½ tsp chilli flakes

½ tsp oregano

½ tsp garlic powder

½ tsp onion powder

1 tbsp parsley

Salt and black pepper to taste

1 tbsp all-purpose seasoning

Tzatziki Base

1 cup Greek yogurt

½ cucumber, grated and squeezed dry

1 clove garlic, minced

1 tbsp olive oil

Salt to taste

Optional: lemon juice and dill

Paprika Butter Sauce

2 tbsp butter

½ tsp paprika

½ tsp chilli flakes

Instructions

Prepare the chicken mixture

In a bowl combine chicken mince, paprika, cumin, chilli flakes, oregano, garlic powder, onion powder, parsley, salt, pepper, and a little olive oil. Mix well.

Spread on tortillas

Lay the tortillas flat and spread a thin, even layer of the chicken mixture over each tortilla.

Add cheese

Sprinkle mozzarella over the chicken.

Roll tightly

Roll the tortillas tightly like a wrap.

Cut and skewer

Slice each roll into small pieces and push them onto skewers.

Brush with oil

Lightly brush the rolls with olive oil.

Bake

Place on a tray and bake in the oven at 200°C for about 15–20 minutes, until the chicken is cooked and the tortillas are crispy.

Make the paprika butter

Melt butter in a small pan, then stir in paprika and chilli flakes.

Serve

Spread tzatziki on the plate, place the tortilla skewers on top, and drizzle with the paprika butter sauce.
