🎃 Pumpkin Streusel Muffins Recipe 🎃

No matter what season it is these will ALWAYS be my go to muffin!

Ingredients

For the Muffins:

⭐️1 ¾ cups all-purpose flour

⭐️1 teaspoon baking soda

⭐️½ teaspoon baking powder

⭐️½ teaspoon salt

⭐️1 ½ teaspoons ground cinnamon

⭐️½ teaspoon pumpkin pie spice

⭐️¾ cup granulated sugar

⭐️½ cup brown sugar (packed)

⭐️2 large eggs

⭐️1 cup canned pumpkin puree (not pumpkin pie filling)

⭐️½ cup vegetable oil

⭐️¼ cup milk (any kind)

⭐️1 teaspoon vanilla extract

For the Streusel Topping:

⭐️½ cup all-purpose flour

⭐️¼ cup brown sugar

⭐️½ teaspoon cinnamon

⭐️4 tablespoons melted unsalted butter

Instructions

⭐️Preheat & Prep:

Preheat your oven to 350°F. Line a muffin tin with paper liners or lightly grease with nonstick spray.

⭐️Make the Streusel:

In a small bowl, mix flour, brown sugar, and cinnamon. Cut in the melted butter with a fork or your fingers until it forms wet like sand

⭐️Make the Muffin Batter:

In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.

In another bowl, whisk together the granulated sugar, brown sugar, eggs, pumpkin puree, oil, milk, and vanilla until smooth and fully combined.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.

⭐️Fill the Muffin Tin:

Divide the batter evenly between the 12 muffin cups. Each should be about ¾ full.

⭐️Add the Streusel:

Generously sprinkle the streusel topping on each muffin.

⭐️Bake:

Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.

⭐️Cool:

Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
