✨ Puerto Rican baked chicken recipe ✨
Whenever I have those days where I jus don’t know what to cook or I need something that takes only 30 mins, I ALWAYS circle back to my comfort food. Puerto Rican baked chicken!
Ingredients:
•1-2 lbs of chicken breast, thigh, or drumsticks
•1 tablespoon of adobo per pound of meat. (Or you can sprinkle until your ancestors tell you it’s enough)
•1/4 - 1/2 packet of sazon (we don’t want orange chicken just a little bit of color)
• 2 tablespoons of garlic powder
•2-3 tablespoons of sofrito
Directions:
-place the chicken in a baking dish. Drizzle the chicken in a neutral oil like vegetable, olive, or corn oil.
-add all the seasonings listed above.
-bake your chicken at 425 for 25 to 30 mins or until the chicken falls apart when tonged open.
One of the things I love most about this Puerto Rican baked chicken recipe is how effortlessly it brings vibrant Caribbean flavors to your dinner table without requiring hours or complicated steps. The combination of adobo seasoning, sazon, garlic powder, and sofrito creates a rich and aromatic profile that really elevates the chicken's taste. In my experience, using a mix of chicken cuts like thighs and drumsticks adds variety in texture and flavor, making the meal even more satisfying. I always recommend seasoning the chicken generously with adobo—it’s such a foundational Puerto Rican seasoning that balances salt, garlic, oregano, and pepper beautifully. The sazon packet helps build a subtle color and depth without overpowering, which is key if you want that authentic look without the overly bright orange color. Baking at a high temperature of 425°F allows the chicken skin to crisp up while sealing in the juices, resulting in tender, pull-apart pieces that are incredibly delicious. For a complete meal, serve this chicken over yellow rice or white rice with beans—a classic pairing that complements the main dish perfectly. If you want to customize, try adding a splash of lime juice or a sprinkle of fresh cilantro after baking for a fresh twist. Using a neutral oil like vegetable or corn oil keeps the focus on the seasonings, but olive oil also works beautifully if you prefer a subtle fruitiness. This recipe is a lifesaver for busy weeknights when you need something fast but still crave the comforting and nostalgic flavors of Puerto Rican cuisine. It’s also great for meal prepping since the baked chicken stays moist and flavorful even when reheated. Trust me, once you try this recipe, it’ll quickly become a go-to in your household!
