If you enjoy seafood dishes that are both rich and light, this creamy shrimp and scallops recipe is a great addition to your meal plan. I found that using fully defrosted scallops and shrimp ensures even cooking and a tender texture. To elevate the flavor, don’t hesitate to add freshly minced garlic; it really infuses the creamy sauce with depth. One tip I've learned is to gently simmer the cream and Parmesan mixture just until it thickens slightly—avoid boiling to keep the sauce smooth and velvety. Serving the creamy seafood over brown rice not only adds fiber but also balances the dish with a nutty flavor, making it more wholesome. For those watching their calorie intake, using a moderate amount of butter and opting for light cream can still achieve that luxurious creaminess without excess fat. I also like to sprinkle a bit of fresh parsley or chives on top for color and a fresh aroma. This recipe is versatile: you can customize it with your favorite herbs or add a splash of white wine to the sauce for a subtle tang. It's a perfect meal for anyone on a diet who wants to avoid boring meals while still enjoying indulgent flavors. Plus, it's quick to prepare on busy evenings, making it a convenient option for weeknight dinners that impress.
