✨ Korean ground beef bulgogi recipe ✨
If you know me, then you know I love ALL things Korean! One of the first meals I tried at a Korean restaurant was beef bulgogi and OMG it was a dish that truly changed my life! This is the easy meal prep version of the dish. It’s perfect to make and heat up and is packed with protein and veggies!
Ingredients
• 1 lb ground beef
• 2 green onions
• 1/4 bag of frozen green beans or 1/2 cup
• 1/4 cup brown sugar
• 1/4 cup soy sauce
• 1 teaspoon ginger
• 2 teaspoons sesame oil
• 3 garlic cloves
Directions:
- To a pan over medium heat add 1 tablespoon oil. Add in the 3 minced garlic cloves and the white part of the green onions. Stir fry for 30 seconds or until fragrant.
- Add in the ground beef and cook about 80% before adding in the frozen green beans. Top the beef and green beans with the sauce (brown sugar, soy sauce, ginger, and sesame oil) and simmer until green beans are soft and ground beef is cooked all the way.
- Top with the rest of the chopped green onions and serve over white rice!
When I first tried making Korean ground beef bulgogi at home, I loved how simple and versatile this dish turned out to be. Using ground beef instead of traditional sliced beef makes it a budget-friendly and quicker alternative without losing the rich flavors. One tip I learned is to make sure the garlic and green onions are sautéed until fragrant before adding the beef; this step really elevates the aroma and taste. Adding frozen green beans is a convenient way to include veggies and add texture, but you can also swap in other greens like spinach or bell peppers according to your preference. Simmering the beef and veggies with a balanced mix of brown sugar, soy sauce, fresh ginger, and sesame oil creates a slightly sweet and deeply savory sauce that clings perfectly to each bite. For meal prep, I like to cook a larger batch and portion it out with rice for easy reheating during busy weekdays. This bulgogi not only satisfies cravings for Korean flavors but also keeps meals high in protein and fiber. You can also customize the heat by adding chili flakes or a splash of gochujang if you want some spice. Serving it over warm, fluffy white rice completes the experience, making it a comforting and fulfilling one-pot meal that’s both delicious and practical for any home cook looking to explore Korean cuisine.
