Salmon
4 salmon fillets
½ tsp salt
1 tsp paprika
3 garlic cloves, minced
1 piece fresh ginger, grated
2 tbsp soy sauce
2 tbsp maple syrup
½ cup orange juice
Broccoli
2 heads broccoli, cut into florets
2 garlic cloves, minced
1 tsp butter
Sprinkle of chilli flakes
Drizzle of soy sauce
To Serve
Cooked rice
Fried shallots
Reserved marinade
Spring onions, chopped
Method
1. Mix together all of the salmon marinade ingredients and reserve a small amount before adding the salmon. Marinate for at least 30 minutes (or longer if you can 😛)
2. Bake the salmon at 200°C for 15–18 minutes, or until cooked through and lightly caramelised
3. While baking the salmon, steam the broccoli until just tender, then toss it in a pan with the butter, garlic, chilli flakes and a drizzle of soy sauce
4. Serve the salmon over rice with the broccoli. Spoon over the reserved marinade and finish with fried shallots and spring onions!!
