1.) ROTISSERIE WILD RICE SALAD

A favorite of mine and my bestie

•Sauté 1 cup of wild rice with butter, olive oil, and garlic until lightly toasted. Then add water and cook according to package instructions.

•Shred rotisserie chicken and add to rice

•Mix together appx 1/4 cup sunflower oil, 2 minced garlic cloves, and freshly ground pepper and salt (I like pink Himalayan salt)

•Add in chopped pecans, pumpkin seeds, thinly sliced green onion, dried apricots, and dried cranberries.

•Drizzle over a little extra sunflower oil if needed and a touch of lemon zest to brighten up the dish if preferred.

2.) WHITE WINE ROTISSERIE AND LEMON GREEK POTATOES

•Cube 4 Yukon gold potatoes and set aside.

•In the bottom of a roasting pan mix 3/4 cup of chicken broth, 2 Tbs butter, the juice of 1 lemon, 4 minced garlic gloves, 1/4 white onion chopped, salt and pepper to taste. Stir in potatoes.

•Roast at 400* F for 45 minutes. Remove potatoes and set aside, leaving juices in the roasting pan.

•Add a splash of white wine (add enough so that the wine mixed with lemon broth from the potatoes just covers the entire bottom of the pan) and put the rotisserie chicken on top. Broil for a couple minutes until golden.

•Serve and top with roasting juices

3.) BBQ ROTISSERIE

•Shred chicken, drench in bbq sauce and cook in saucepan or warm in microwave. For a little added flavor and pizazz, you can spread it on a baking sheet, broil it for a few minutes, and then add a little extra bbq sauce.

•Best served over mashed potatoes 😋

4.) ROTISSERIE CHICKEN SALAD

•Shred chicken. Mix with mayo, Dijon mustard, garlic powder, dried terragon, sliced red grapes, chopped walnuts, sliced green onion, and salt and pepper to taste.

•Serve on crackers, lettuce leaves, bread of choice, or apple rings.

5.) ROTISSERIE WRAP

•Shred chicken

•Pick out a tortilla. I have a low carb sundried tomato tortilla.

•Get yourself a pre packaged salad kit. This one is a green goddess one. Mix in the separate components of the salad kit. You can either mix in the dressing or reserve it to drizzle over top.

•Add everything to the tortilla and wrap!
