And for those who love a milder, melty experience, blocks of mozzarella or even provolone can work wonders on the grill or in the oven. Making your own cheese kebabs is surprisingly simple. For a quick and easy version, I love using Halloumi. Just cut the cheese into thick cubes, about an inch square. You can marinate them for 15-30 minutes in a mix of olive oil, lemon juice, dried oregano, and a pinch of chili flakes – totally optional, but it adds a nice kick! Thread them onto skewers, alternating with colorful veggies like bell peppers, cherry tomatoes, and red onion. Grilling them is key! Make sure your grill is preheated to medium-high heat and lightly oiled to prevent sticking. If you don't have a grill, a hot griddle pan or even baking them in the oven at 400°F (200°C) for 15-20 minutes, flipping halfway, works perfectly too. What I love most about cheese kebabs is how versatile they are. They make a fantastic vegetarian main course, but they also shine as a delicious side dish alongside grilled chicken, beef, or lamb. I usually serve them with a fresh tzatziki, a vibrant pesto, or even a simple squeeze of fresh lime juice. They’re also amazing in a warm pita bread with some fresh salad greens.
