From my experience, the key to success is patience and consistency when feeding your sourdough starter. I kept a simple routine, feeding my starter at the same time every day, which helped it become active and bubbly, essential for a good rise. One of the most exciting parts about sourdough baking is what you can do with the discard—the portion of starter you remove during feeding that is often thrown away. Instead of wasting it, I've tried making pancakes, crackers, and even muffins. Sourdough discard adds a subtle tangy flavor and extra nutrition to these recipes, and it’s a perfect way to reduce waste. For the actual loaf, I found that allowing enough time for bulk fermentation and proofing is crucial. This process helps develop the characteristic chewy texture and complex flavor sourdough is known for. I experimented with shaping techniques and found that gently folding the dough during bulk fermentation improved its structure. Also, using a Dutch oven to bake my sourdough gave the loaf a beautiful crust by trapping steam during the first part of baking. If you’re just starting out, don't worry if your first few loaves aren't perfect. Each bake teaches you something new about how your starter behaves and how different factors like humidity and flour types affect your bread. Feel free to experiment with recipes that use sourdough starter or discard—it’s a fun and sustainable way to enjoy homemade bread and baked goods.
