The Secret to PERFECT Fried Calamari 🤫🔥

4/16 Edited to

... Read moreFried calamari is one of my favorite appetizers to prepare at home, and getting it just right can be a game changer. From my experience, the key to perfect fried calamari lies primarily in the preparation and frying temperature. First, it's essential to pat the calamari rings completely dry before coating them; any moisture will cause the breading to become soggy rather than crispy. Using a combination of flour and cornstarch or semolina flour for the coating creates that irresistible crunch. I usually toss the calamari in seasoned flour with a pinch of salt, pepper, and a touch of paprika for extra flavor. For frying, heating the oil to around 350°F (175°C) ensures a quick fry that seals the calamari without making it rubbery. Another tip is to fry the calamari in small batches to keep the oil temperature stable. Overcrowding the pan causes the temperature to drop and results in greasy, limp calamari. After frying, draining the calamari on paper towels helps absorb excess oil, keeping them light and crispy. Serving fried calamari with a squeeze of fresh lemon juice and a dipping sauce like garlic aioli or marinara boosts the flavor further. Once I applied these techniques, my homemade fried calamari turned out just as good as in restaurants, and my friends and family always ask for seconds. Give it a try, and you’ll see how small changes in preparation make a huge difference in achieving that perfect crunch and tenderness.

In the recipe it says after you soak them in buttermilk to let rest, but it doesn’t say whether you’re supposed to drain it first or not
