Start by marinating 1/4 lb thinly sliced beef with 2t sugar, 1.5T mirin, 2T soy sauce, 1T oyster sauce, 1t black pepper, and 1T minced garlic. Set aside for at least 15 minutes.
Prep all your veggies! Here I used shiitake mushrooms, carrots, spinach, and zucchini, but feel free to add whatever you like.
Sautee your carrots in 2t oil with some salt until soft and tender. Set aside.
Repeat for zucchini.
Sautee the mushrooms for 2 minutes, then add 1t soy sauce and 2t water. Set aside.
Blanch the spinach for 30 seconds, and then immediately rinse under cold water. Add 2t sesame oil, salt to taste, and 2t sesame seeds. Set aside.
Cook the marinated meat on medium heat for about 4-6 minutes. Don’t let it burn!
Now for assembly - start by heating a cast iron skillet on high heat with about 2T sesame oil. Once it starts bubbling, spread out 2 cups of cooked rice and leave it for a few minutes until a slight crust forms. Arrange the veggies and meat on top.
Then add 2 over easy eggs, 1T gochujang, and a generous drizzle of sesame oil. Mix and enjoy!
