You know, there's just something magical about the aroma of homemade Puerto Rican frituras. For me, it instantly takes me back to my childhood kitchen, watching my mami and abuela expertly mix, shape, and fry these delicious bites. They always said, 'Cooking is an act of love,' and with every alcapurria or sorullito, I truly feel that love. It's more than just food; it's a piece of our culture, our history, and our heart. When people ask me, 'What are frituras?' I always smile. It’s not just one thing! Puerto Rican frituras are a whole world of savory and sometimes sweet fried delights, each with its own unique flavor and texture. My family’s kitchen was always bustling with the creation of these treasures. Take alcapurrias, for instance. These are a true classic, made from a vibrant masa (dough) of grated green bananas and yautía (a type of root vegetable), then filled with seasoned ground beef or crab. The earthy flavor of the masa combined with the savory filling, all fried to a perfect golden crisp, is simply irresistible. And then there are bacalaitos, light and airy codfish fritters that are wonderfully salty and savory, perfect as a snack by the beach. My abuela would make them so thin and crispy, they almost melted in your mouth! And who could forget sorullitos de maíz? These golden cornmeal sticks, often filled with a bit of cheese, are a sweet and savory treat that disappears as fast as you make them. They’re amazing dipped in mayo-ketchup! Beyond these, we also cherish pastelillos and empanadillas, which are essentially savory turnovers, often filled with ground meat, chicken, or cheese. My mami had a special way of crimping the edges, making each one a little work of art. But the world of Boricua frituras doesn't stop there! We have rellenos de papa, seasoned ground beef encased in a fluffy mashed potato ball and then fried. Imagine that! Or the sweet and savory piononos, made with ripe plantain slices wrapped around a meat filling, often forming a little cup. There are also arepas (not to be confused with South American ones!), almojábanas (cheese fritters), granitos (small corn fritters), and even our unique take on tacos. My favorite part was always seeing which fritura my family would decide to make that day. Making these at home is a labor of love, but so incredibly rewarding. The key, my abuela always insisted, is fresh ingredients and getting that oil temperature just right. It’s about feeling the dough, tasting the seasoning, and sharing the joy.
