These are my apple cheesecake spiced cookies, and they are super delicious. Bake up perfectly and it’s extra chewy with a crisp edge!

Cheesecake Filling:

• 8 oz cream cheese (softened)

• 1/4 cup sugar

• 1 tsp vanilla

• 1 tbsp cornstarch

• 1/4 cup apple compote

Cookie:

• 1 cup (2 sticks) butter, softened

• 1 cup brown sugar

• 1/2 cup white sugar

• 2 eggs

• 2 tsp vanilla

• 2 1/2 cups all-purpose flour

• 1 tsp baking soda

• 1 tsp cinnamon

• 1/2 tsp nutmeg

• 1/2 tsp salt

Quick Apple Compote:

• 1 apple, diced up (peel if you want)

• 2 tbsp brown sugar

• 1 tsp lemon juice

• 1/2 tsp cinnamon

• Splash of water

→ Cook in a small pan until soft and jammy (8–10 minutes). I used an immersion blender to blend the apples more. Cool before using.
