Keto Chocolate Pudding Cake, Mug Cake
Ingredients
3 tbsp of keto flour - King Arthur Brand
3 tbsp of cocoa powder
1/2 tsp of baking powder
Pinch of salt
1/3 cup of granulated sweetener
1 tbsp of vanilla
1 tbsp of mayo
2 tbsp of keto maple syrup
1/4 cup of cold water
1-2 tbsp of keto chocolate sauce (for filling)
Chocolate sauce - 1/4 cup of cocoa powder, 1/4 cup of water, 1/2 cup of granulated sweetener, Pinch of salt, 1 tsp of vanilla (In a saucepan, cook everything until it starts to simmer, then it's done.)
Add oil to your microwave-safe bowl that you will make your Mug Cake. This will allow the cake to come out easily.
Mix all ingredients except for the sauce in a bowl. Once mixed, pour half of your cake batter into your small bowl. Pour your sauce on top of the first layer of cake batter. Now, pour the remaining cake batter on top of the sauce. Microwave for 45-60 seconds.
Turn your cake upside down on top of a plate and pour more chocolate sauce on top.
Enjoy!
I absolutely love finding keto recipes that feel like a true indulgence, and this Keto Chocolate Pudding Mug Cake is definitely one of them! As someone who often craves something sweet but wants to stick to my low-carb goals, this recipe has been a total game-changer. It’s not just quick; it delivers on that perfect 'pudding cake' experience that's often hard to achieve in microwave desserts. What truly makes this mug cake stand out is its incredible texture – it's both wonderfully fluffy and delightfully *gooey*. Many mug cakes can end up dry or rubbery, but with a few simple tricks, you can ensure yours comes out perfectly moist every single time. The secret lies partly in the cooking time: those 45-60 seconds in the microwave are crucial. Overcooking by even a few seconds can change that desirable porous texture into something dense. I’ve found that starting at 45 seconds and adding 5-second increments until it’s just set but still a little wobbly in the middle gives the best result. This ensures the cake remains tender and rich, avoiding any dryness. Another unsung hero in achieving that lush texture is the tablespoon of mayo. Trust me, don't skip it! It adds an incredible amount of moisture and fat, contributing to the cake’s tender crumb without imparting any savory flavor. It’s part of what makes this rich keto chocolate pudding mug cake live up to its name. Now, let's talk about the pudding aspect and that irresistible gooey center. The technique of layering the homemade chocolate sauce between the cake batter is pure genius. This creates a molten, lava-cake-like core that oozes out when you break into it. Speaking of chocolate sauce, the recipe for the homemade one is essential. Cooking the cocoa powder, water, sweetener, salt, and vanilla until it simmers transforms it into a smooth, glossy chocolate sauce that’s far superior to any store-bought version. This thick, decadent sauce not only acts as the 'pudding' layer but also makes a fantastic topping. When you flip the cake onto a plate and pour more of that thick chocolate sauce dripping down the sides, it truly elevates the experience. You get to see that chocolate sauce pooling around the base, making it look incredibly appetizing, just like those close-up shots we all adore. For an extra touch, I sometimes add a tiny pinch of flaky sea salt on top of the final sauce drizzle; it really enhances the deep chocolate flavor. To make this even more practical, consider that this recipe is incredibly versatile. If you don't have King Arthur keto flour, another blanched almond flour blend can usually work well, though you might need minor adjustments to liquid. For those who want an even richer chocolate experience, folding in a few sugar-free chocolate chips into the batter before microwaving can add another layer of molten goodness. This low carb chocolate mug cake is truly a lifesaver for those moments when a chocolate craving hits hard. It’s quick, satisfying, and perfectly portion-controlled, helping you stay on track with your keto journey without feeling deprived. Give it a try, and prepare to be amazed by how such a simple microwave recipe can yield such a *fluffy*, *gooey*, and utterly decadent treat!
