Sugar-free Pioneer Woman Cinnamon Rolls

Lower Carb Cinnamon Rolls, 8 count

11 net carbs per roll

These cinnamon rolls are so soft. You do not need to wait for dough to rise with this recipe.

Ingredients for dough

1 cup of carbquik, plus 2 tbsp

1 cup of cake flour, plus 2 tbsp

1 cup of half and half

2 oz of oil

1/4 cup of granulated sweetener

1/2 pack of active dry yeast

1/2 tsp of baking powder

1/2 tsp of baking soda

Pinch of salt

Filling

1/2 stick of unsalted butter, softened

1/2 cup of brown sugar substitute

1 tbsp of cinnamon

Optional topping (pour on top before baking)

1/3 cup of heavy cream

2 tbsp of unsalted butter, melted

3 tbsp of brown sugar substitute

(Mix your melted butter and brown sugar substitute together)

Warm up your half-and-half and add your yeast. After a few minutes, add your flours (only the 2 cups, not the additional 2 tbsp of carbquik or 2 tbsp of cake flour), granulated sweetener, oil, and salt.

Once everything is mixed, you will have a very sticky dough. Now add your additional flour (2 tbsp of carbquik and 2 tbsp of cake flour), baking powder, and baking soda. Start working your dough. If it's two sticky, add more carbquik flour. The dough will be a but gooey.

*Note: I did not try to let these rise due to the carbquik. It's a flour that doesn't rise well

Now roll out your dough on a floured surface. Add your filling and roll your cinnamon rolls, and cut onto 8 rolls.

Pour heavy cream and melted butter and brown sugar substitute on top of rolls.

Preheat your oven to 375° and bake for 20-25 minutes.

Icing (whisk all ingredients well)

1-2 cups of granulated powdered sweetener (add as much as you need to get the texture you want)

1/4 cup of brewed coffee

1 tbsp of sugar-free maple syrup

1/4 cup of half-and-half

1 tbsp of melted butter

Pinch of salt

Serve warm.
