Banana Blueberry Muffins with Lemon Cream Cheese
Ingredients
3 cups of almond flour
3 bananas, ripe
3 large eggs
1 tbsp of vanilla
1 tsp of cinnamon
1 tsp if baking powder
1 tsp of baking soda
1 cup of granulated sweetener
Pinch of salt
1 cup of frozen blueberries
Filling
8 oz od cream cheese, softened
1/4 cup granulated sweetener
1 tsp of lemon extract
Preheat your oven to 350°.
In a bowl, mix your cream cheese, sweetener, and lemon extract until smooth.
In a blender, blend your eggs, bananas, vanilla, cinnamon, baking powder, baking soda, sweetener, and salt until smooth. (You don't need a blender, I just find it easier than mixing everything by hand)
In a large bowl, add your almond flour and pour your mixture into the bowl. Mix well and add your frozen blueberries. Pour into your greased muffin pan, filling halfway. Add your cream cheese filling on top of each and add the remaining muffin batter on top (I used a 6 cup muffin pan). Bake for 30-35 minutes. If you notice the muffins are getting too brown, top with foil.
Let the cool a bit before removing them from the pan.
