Blueberry Biscuit Muffins
Ingredients
2 cups of carbquik
1/2 tsp of salt
1/3 cup of water
3 tbsp of half-and-half
1/4 cup of melted unsalted butter
3 tbsp of granulated sweetener
1 cup of blueberries (mixed with 2 tbsp of granulated sweetener)
In a bowl, mix your ingredients. Add more water or half and half if too dry. Batter will be crumbles. I formed my biscuits with my hands and put them in a greased muffin pan.
Bake for 20 minutes at 350°. Brush on more melted butter. This is optional.
Note: Warm in the microwave to get them soft again.
