I recently tried this sugar-free chocolate chip cookie recipe, and I was pleasantly surprised by how tasty and satisfying they are, especially considering they have only 4.6 net carbs per cookie. Using dark rye flour not only adds a unique depth of flavor but also boosts the nutritional value compared to traditional wheat flour. The combination of monk fruit and erythritol as sweeteners gives a perfect balance of sweetness without any aftertaste. One tip I found helpful was to ensure the melted butter is warm but not hot when mixing with the sweeteners and egg yolk; this helps the dough come together smoothly without curdling. Using a spatula to fold the ingredients gently made it easier to achieve an even mixture without overworking the dough. Baking for exactly 8 minutes at 350° yielded soft, chewy cookies, while letting them cool for 10 minutes was essential for the texture to set properly. For those who prefer a bit more chocolate, adding extra semi-sweet chocolate chips works wonderfully. I also experimented with substituting part of the dark rye flour with almond flour for an even lower carb count and a nuttier taste. These cookies are perfect for anyone managing blood sugar levels, following ketogenic or low-carb diets, or simply looking for a healthier treat option. Incorporating this recipe into my low-carb dessert rotation has been a win! It’s great for satisfying sweet cravings without derailing my nutrition goals. Plus, sharing them with friends and family has sparked a lot of interest because they taste indulgent while being sugar-free. I highly recommend giving these sugar-free chocolate chip cookies a try if you want a guilt-free dessert that’s both delicious and easy to make.
