One pot toddler friendly veggie packed pasta
I love this high protein veggie packed toddler and kid friendly pepper pasta. Perfect for a weeknight meal, one pot and makes leftovers. My little one for now loves her veggies but the blended sauce would make this great for pickier little ones too. tend to wing recipes so trying to make notes as I go this kind of veggie pepper pasta is easy to pull together and takes 20-30mins and one pot.
Ingredients
1 medium red onion
2 peppers
2 large tomatoes
1 cup cottage cheese
2 cups bone broth (low sodium preferred)
2 cups pasta (I prefer these small shells called conchigliette as they carry the sauce well
1 teaspoon paprika
Two garlic cloves
Add all veg to pan with olive oil and seasonings, cook down till soft
Add cheese and broth then bring to a boil,
Use an immersion blender to turn into a smooth sauce
Chuck your pasta in until cooked through and the sauce has reduced. If it’s looking a little dry add more water and if it’s too thick cook down a little longer
Made two adult portions and two toddler portions
so dinner and lunch the next day
