Base ingredients:
1 cup pecans (125g)
1 cup almond flour ground almonds (100g)
3 tbsp melted coconut oil
¼ cup smooth almond or peanut butter (60g)
3 tbsp maple syrup
½ tsp sea salt optional
Topping ingredients:
1½ cups soft medjool dates (200g)
1 cup pecans (125g)
15 extra pecans halves for the top
INSTRUCTIONS:
1. To make the base, blend 1 cup pecans into a flour and mix with the other base ingredients. Press into a greased (and lined) loaf tin. Refrigerate while you make the topping.
2. To make the topping, add the pitted dates and pecans to a food processor and blend until smooth. If your dates are a bit dry add 1-2 tbsp of water as you blend. Once fully combined, spread on top of the base and top with extra pecans. Refrigerate to set for at least an hour.
3. Once hard, cut into squares.
