When my daughter first asked for 'pan cortado,' I honestly wasn't sure what she meant! But after a quick search and a trip to our local Mexican bakery, I realized she was talking about those delightful, often pink-glazed, square pastries we know as Cortadillos. They're such a nostalgic part of Mexican pan dulce culture, and seeing her eyes light up for them really inspired me to try making them myself. Learning to bake these at home has been such a rewarding journey. It's not just about the delicious taste, but also about creating those special kitchen memories. While the original recipe is pretty straightforward, I've picked up a few tips along the way that I think will really help if you're venturing into homemade Cortadillos for the first time. First off, the dough is key. It's a sweet, enriched dough, similar to brioche but usually a bit denser. Don't be intimidated by yeast! Just make sure your water or milk is lukewarm – not too hot, or it'll kill the yeast, and not too cold, or it won't activate properly. I usually aim for around 105-115°F (40-46°C). And really, don't skimp on the kneading time. That's what develops the gluten and gives your Cortadillos that perfect, tender crumb. I usually knead by hand for about 10-15 minutes until the dough is smooth and elastic. If you have a stand mixer, even better! Once your dough has had its first rise – it should double in size in a warm spot – it’s time to shape them. The classic Cortadillo is a square, so I usually roll out the dough into a rectangle and then cut it into even squares. This is where the 'cortado' (cut) part of the name comes in! Some people like to make them thicker, others thinner. It's all about personal preference. Now, for the iconic pink glaze! This is typically a simple powdered sugar glaze, often flavored with vanilla and tinted with a few drops of red food coloring. You want it thick enough to coat the pastry beautifully but not so thick that it's clumpy. A little milk or water can help you achieve the perfect consistency. Sometimes, I add a tiny bit of almond extract instead of vanilla for a different twist. And don't forget the sprinkles! They add that extra festive touch that kids (and adults!) adore. Baking them until they're golden brown and fragrant is pure magic. The smell that fills your kitchen is just incredible.
