Country Apple Fritter Bread
Ingredients :
For the Bread:
• 1/3 cup light brown sugar
• 2 teaspoons ground cinnamon
• 2 apples, peeled and chopped (any variety)
• 2/3 cup granulated sugar
• 2 tablespoons granulated sugar (for the apples)
• 1/2 cup (1 stick) butter, softened
• 2 large eggs
• 1 1/2 teaspoons vanilla extract
• 1 1/2 cups all-purpose flour
• 1 3/4 teaspoons baking powder
• 1/2 cup plus 1 to 3 tablespoons milk (or almond milk)
• Pinch of salt
• Nonstick cooking spray (for greasing loaf pan)
For the Glaze:
• 1/2 cup powdered sugar
• Milk (just enough to reach drizzling consistency)
Instructions :
Step 1: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with nonstick cooking spray.
Step 2: In a small bowl, combine 1/3 cup light brown sugar and 2 teaspoons ground cinnamon. Set aside.
Step 3: In another bowl, toss chopped apples with 2 tablespoons granulated sugar and set aside.
Step 4: In a large mixing bowl, cream together 1/2 cup softened butter and 2/3 cup granulated sugar until light and fluffy.
Step 5: Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Step 6: In a separate bowl, whisk together flour, baking powder, and a pinch of salt.
Step 7: Gradually add the dry mixture to the butter mixture, alternating with milk, beginning and ending with the flour. Mix until just combined.
Step 8: Spread half the batter into the prepared pan. Sprinkle with half the cinnamon sugar mixture, then top with half the apples. Repeat the layers.
Step 9: Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Step 10: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 11: In a small bowl, mix powdered sugar with enough milk to create a glaze. Drizzle over the cooled bread.
