Cheese layer:
• Lifeway Farmers Cheese – 500 g
• 2 eggs
• 50 g sugar
• 1 tbsp cornstarch
Pumpkin layer:
• Hokkaido pumpkin purée – 500 g
• 2 eggs
• 50 g sugar (add more if pumpkin isn’t sweet)
• 1½ tbsp cornstarch
• Zest of ½ orange and add vanilla (optional)
Instructions
1. Prepare the pumpkin:
Peel and cut Hokkaido pumpkin into small pieces with butter and 3 Tbsp brown sugar.
Roast at 180°C (356°F) until soft, then blend into purée.
2. Cheese layer:
In a bowl, mix Lifeway Farmers Cheese, eggs, sugar,cornstarch.
Blend until smooth and creamy.
3. Pumpkin layer:
In another bowl, combine pumpkin purée, eggs, sugar, cornstarch, orange zest.
Blend until smooth.
4. Assemble:
Line a baking pan with parchment paper.
Spoon 1 tbsp of the pumpkin mixture into the center, then 1 tbsp of the cheese mixture on top.
Continue alternating layers until the pan is full.
5. Bake:
Bake at 160–170°C (320–340°F) for about 1 hour.
Let cool slightly before removing from the pan.
Enjoy warm or chilled.
