Crunchy Japanese Long Fries
* 6 medium potatoes or 3-4 big ones
* 1/3 cup potato starch
* Onion powder, paprika, garlic powder, salt, pepper to taste.
* Avocado oil for frying
* Parmesan or Gruyere cheese on top.
* For chipotle ranch sauce : 1/2 cup mayonnaise, 1/4 cup sour cream, 1 to 2 chipotle peppers in adobo, very finely chopped, 1 tsp adobo sauce, 1 tbsp milk or buttermilk, 1 tsp lime juice, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 tbsp chopped fresh dill or parsley, 1 tbsp chopped chives, 1/4 tsp salt, 1/4 tsp black pepper
Instructions:
1. Boil the potatoes
Peel and cut the potatoes into chunks. Boil until very tender, about 15–20 minutes.
2. Mash until smooth
Drain well, then mash thoroughly while hot. Let the steam escape for a few minutes so the mixture is not watery.
3. Make the dough
Mix in the potato starch, salt, paprika, garlic powder, and pepper. Stir until it becomes a thick, pipeable dough. If it feels too loose, add a little more starch, 1 tablespoon at a time.
4. Set up for shaping
Transfer the dough into zip lock bag, roll and freeze for 40 min- 1 hour.
5. Heat the avocado oil to about 350°F / 175°C.
6. Cut and fry
Cut a long strips and fry 4-6 at a time so the pan is not crowded.
7. Cook until crisp
Fry for 3–5 minutes, turning once or twice, until golden and crisp.
8. Drain and season
Remove to a rack or paper towels. Sprinkle with salt, parmesan right away. Add any extra toppings while hot.
