Monday’s Budget Meal: Chicken Caesar Salad Wrap
Dinner cannot get any easier than 15 minutes and using the air fryer. After a long Monday, dinner is the last thing that I want to worry about being complicated. I threw my chicken in the air fryer, tortillas in the microwave to warm up, washed my lettuce, assembled my salad kit, and that was it.
I’m glad I had the budget series to make my life. A little bit easier since I didn’t have to worry about what was for dinner. I try to make every meal as simple, and cheap as possible to make it easy on me at the end of the day. You can use this series the same way. Grocery list provided, recipes listed as well as video tutorials of how it’s done! It really doesn’t get any easier than that❤️
Yall lmk if you are going to try tonight’s meal and I’ll see you tomorrow 😉

After a long day, there’s nothing better than a meal that comes together quickly, tastes amazing, and doesn’t break the bank. My go-to, especially on a busy Monday, has become the Chicken Caesar Salad Wrap. You might think a salad wrap sounds simple, but I've found a few tricks to make it incredibly satisfying and super efficient, especially for anyone looking to eat well without much fuss. First off, let's talk about the star: the chicken. The original recipe uses an air fryer, which is a total game-changer! I usually opt for boneless, skinless chicken breasts or even thighs, cut into bite-size pieces. Before popping them in the air fryer, a simple seasoning makes all the difference. Think garlic powder, onion powder, a little paprika, salt, and pepper. Sometimes I’ll even add a dash of dried Italian herbs for extra flavor. The air fryer works its magic, getting the chicken perfectly cooked and slightly crispy in about 9-12 minutes, depending on thickness. It’s hands-off cooking at its best, allowing me to prep other components while it cooks. While the chicken is cooking, I focus on the 'salad' part of the wrap. Romaine lettuce is classic for Caesar salads because of its crisp texture, so I make sure to wash my lettuce thoroughly and let it dry well. No one likes a soggy wrap! For convenience, I often use a pre-made Caesar salad kit – they usually come with dressing, croutons, and Parmesan cheese, making assembly a breeze. However, if I have a little extra time, I'll sometimes whip up a quick homemade Caesar dressing or grate fresh Parmesan. When mixing the salad, I add the dressing sparingly at first, just enough to coat, to avoid over-dressing and ensure the wrap doesn't get watery. Now for the assembly! Once the chicken is done and cut into bite-size pieces, it’s time to warm the tortillas. A quick zap in the microwave for 15-20 seconds makes them pliable and prevents cracking when you wrap them. I prefer large, whole-wheat tortillas for extra fiber and to hold all the delicious fillings. First, I lay down a bed of the dressed lettuce mix, then scatter the air-fried chicken pieces over it. If the salad kit comes with croutons, I either crush them slightly and sprinkle them in for crunch, or I save them to eat on the side to maintain the wrap's integrity. The trick to a good wrap is to not overfill it and to wrap tightly! Fold in the sides of the tortilla first, then roll it up firmly from the bottom. This method helps keep all the ingredients snugly inside. Once wrapped, I slice in half diagonally – it just looks better and is easier to eat. And then, it’s time to enjoy! The combination of tender, seasoned chicken, crisp lettuce, creamy Caesar dressing, and soft tortilla is just heavenly. This wrap isn't just for Mondays, either! It's fantastic for meal prep. I often cook a larger batch of air fryer chicken at the start of the week. Then, I can store the washed lettuce, dressing, and chicken separately in containers. When it’s time for lunch or dinner, all I need to do is warm the chicken, toss the salad, and assemble my wrap in minutes. You can also customize it endlessly: add some chopped bacon, a few cherry tomatoes, sliced avocado, or even a sprinkle of red onion for extra zing. It’s truly a versatile and satisfying meal that keeps things exciting while staying simple and budget-friendly.
