I’ve discovered that homemade pancakes are an absolute lifesaver for easy, low-cost breakfasts that everyone, especially the little ones, will adore. Forget those expensive boxed mixes – making them from scratch is not only cheaper but often tastes so much better, and you have full control over what goes into them. It’s all about smart choices to make our dollars stretch further! So, how do we make these magical, money-saving pancakes? It’s simpler than you think. You likely have most of the ingredients in your pantry right now. Here’s my go-to for an easy, budget-friendly pancake recipe: The Basic Budget Pancake Recipe: 1 ½ cups all-purpose flour 1 tablespoon baking powder (this is key for that "Extra Fluffy" texture!) 1 tablespoon granulated sugar (or a bit less, to your preference) ½ teaspoon salt 1 ¼ cups milk (based on the OCR, I often use "1/3-2/3 cup of milk" for mixing, but start with 1 ¼ and adjust) 1 large egg 2 tablespoons vegetable oil (plus more for cooking) My Easy Method for "Perfect Every Time" Pancakes: In a large bowl, whisk together the flour, baking powder, sugar, and salt. This is your dry mix. In a separate medium bowl, whisk together the milk, egg, and 2 tablespoons of oil. This is your wet mix. Pour the wet ingredients into the dry ingredients. "Mix well adding more" dry mix or milk if necessary to get the right consistency. The secret to "Extra Fluffy" pancakes? Don't overmix! A few lumps are perfectly fine and even desirable. Truly, "Top w/ any" (or "Top w/ anything &") budget-friendly item you have on hand can turn these into a complete meal. "Season every" pancake with a little creativity! Meal Prep for Maximum Savings: To make life even easier and save more money, I often make a big batch of pancakes on the weekend. Once cooled, you can store them in an airtight container in the fridge for a few days or freeze them for longer.
